POTATO SOUP

3 medium potatoes, cut into 1/4" cubes
3/4 cup chopped celery
1/2 cup chopped onion
1/2 cup bacon bits

Cook potatoes, onion, & celery in small amt of water until tender; drain. Make white sauce: Melt 2 Tbs marg., stir in 2 Tbs flour to make a smooth paste. Add 3 cups milk; heat thoroughly, stirring frequently (will thicken). Add cooked potatoes, celery, onion, bacon bits & enough additional milk to desired consistency. Season w/salt & pepper. With burner on medium heat, cook about 10 minutes, stirring frequently.
