POTATO SALAD

Main Ingredients:
5 lbs. potatoes
8 hard-boiled eggs
Dressing Ingredients:
2 1/2 cups Miracle Whip
1/4 cup sugar
2 Tbsp yellow mustard
1 1/2 Tbsp. cider vinegar
1 1/2 tsp. salt
1 tsp. black pepper
Directions:
Peel the potatoes, place in large pot of cold water and bring to a boil. Boil until fork tender. Drain the potatoes. While the potatoes are cooking, mix the dressing ingredients. Cube the potatoes as soon as they are cool enough to handle. Dice the eggs over the potatoes. Mix the dressing in. Refrigerate before service.
The key is to mix everything while the potatoes are still warm so they will absorb the flavors of the dressing as they cool.
