Vanilla-Glazed Sweet Potatoes
3 lbs. sweet potatoes, peeled
1/4 c. butter or margarine
1/4 c. brown sugar, packed
1 t. salt
1 t. grated orange zest
1/4 t. pepper
3 T. orange juice
1 T. Vanilla extract
1/2 c. chopped pecans, toasted
Cook sweet potatoes in boiling water to cover until tender; drain. Cool; cut into 1/4-inch slices. Arrange slices, overlapping slightly, in a greased 13" x 9" baking dish. Melt butter over low heat in a small saucepan. Add brown sugar and next 5 ingredients, stirring until combined and thoroughly heated (do not boil). Remove from heat and brush sauce over potato slices. Broil 6 inches from heat 6 or 7 minutes or until golden. Sprinkle with pecans. Makes 6 servings.
