2 tsp oil
4 large baking potatoes (2 1/2 lbs), scrubbed
1 tsp salt
1/4 freshly ground pepper
Preheat oven to 450 degrees. Line cookie sheet with foil. Cut potatoes lengthwise into 1/2 inch thick wedges. Transfer to large bowl. Add oil, salt and pepper; toss. Spread potatoes in single layer on prepared cookie sheet. Bake 20 to 25 minutes, until golden and crisp. Serve immediately.
