3 1/4 lbs new potatoes, peeled & cut in 3/4" pieces (about 8 cups)
3 cups water
2 cups (10 oz) frozen green peas
2 Tbsp butter
3 Tbsp flour
1 1/3 cups milk
1 tsp salt
1/2 tsp onion powder
Bring potatoes & water to boil. Reduce heat, cover and simmer 10 minutes. Stir in peas, cover and simmer 5 - 8 minutes longer until potatoes are tender.
Drain, reserving 2/3 cup of cooking liquid. Melt butter in same saucepan over Med. heat. Whisk in flour until blended. Gradually whisk in milk and reserved cooking liquid. Bring to gentle boil, whisking constantly until sauce is thickened, 3 -4 minutes. Remove from heat. Add salt and onion powder and gently stir in potatoes and peas until coasted. Heat through. 12 Servings.
