Vension Jerky
Be prepared to cook for 6 hours!
3 lbs of venison scrap meat
2 to 3 tsp of Red Pepper
3 tsp of large ground Red Pepper (th etype you can add to pizza)
2 to 3 tsp of Black Pepper
1 cup granulated sugar
1 to 2 tsp salt
3 tbsp Liquid Smoke
1/2 cup soy sauce
1/2 cup worschister sauce
Let soak for at least one hour; if you allow it to set longer
it will have a more sweet taste.
Shake the meat enough to keep it from dripping and lay it flat on a baking
sheet
Re-sprinkle pepper for hot jerky.
Cook in the oven for 6 hours at 180 to 200 degrees.(Turn over Jerky after
4 hours)
You may cook it longer (1/2 hour or so).
You can experiment, add garlic, etc..
