1 lb Round Steak, tenderized (if not, ask butcher to do it for
you)
2 Tbsp flour
1/4 cup cooking oil
1 medium onion, chopped
1 large can (30 oz.) whole tomatoes, chopped
salt and pepper to taste
Cut off excess fat. Salt and pepper meat and coat with flour, pound meat well with meat mallet (or use edge of corning saucer, not too hard). Turn meat over, repeat flouring and pounding. Do this 2 times each side. Meantime, place chopped onion and tomatoes in saucepan and heat through. In electric fry pan on MED (350 deg), brown meat on both sides. Add hot onion/tomato mixture, covering meat (place some underneath meat). Reduce heat to LOW (about 200 deg), cover and simmer about 1 ½ hours or until meat is fork-tender, turning meat once after about 45 minutes. Serve with green beans and hot mashed potatoes, buttered cooked noodles, or rice.
