LEMONY LINGUINE WITH SAUSAGE

Ingredients:
3 quarts water
1 (9-0z) package fresh linguine
2 tsp extra-virgin olive oil
1/2 lb sweet Italian turkey sausage links
1 sliced shallot
1 (9-0z) bag baby spinach
1 lemon
Directions:
Bring 3 quarts water to boil in large saucepan. Add 1 (9-oz) package fresh linguine and cook until al dente, 2 minutes. Drain, reserving 1/3 cup cooking water. Meanwhile, heat 2 tsp extra-virgin olive oil in large nonstick skillet over medium-high heat. Add 1/2 lb sweet Italian turkey sausage links, casings removed; cook, breaking up with spoon until browned, 5 minutes. Transfer to plate. Add 1 sliced shallot and cook, stirring, until golden, 2 minutes; add to sausage. Add 1 (9-oz) bag baby spinach and cook, stirring, just until wilted, 3 minutes. Return sausage to skillet and cook, stirring, until heated through, 2 minutes. Add pasta, reserved 1/3 cup cooking water, and grated zest and juice of 1 lemon; cook, stirring, until heated through, 1 minute.
