CHICKEN & NOODLES

1/2 onion, quartered
4 carrots (ends cut off), halved
4 celery sticks, halved
3 - 4 lb whole fryer
4 chicken bouillon cubes
1 1/2 pkg noodles

Place vegs in bottom of (6 quart) pot. Wash chicken and place on top of vegs. Put in enough water to barely cover the chicken, place 4 chicken bouillon cubes around water. Bring to a boil, salt and turn to a simmer. Let simmer all day (4 - 6 hrs).

Remove from heat and drain off broth into another pot and set aside.

Place chicken into a dish and allow to cool. Toss vegs away. When chicken is cool enough, separate meat from skin & bones.

Clean out large pot and return broth to it. Bring to a boil, turn to low and add 1 1/2 pkg noodles (depending of amt of broth), stirring frequently.

Add diced chicken to noodles during cooking. When noodles are tender, serve. Make a veg or jello. (Can freeze 1/2 or chicken for pot pie or whatever.)
