2 cups Original Bisquick
2 cups sugar
1/2 cup vegetable oil
2 tsp ground cinnamon
1 tsp baking soda
4 eggs, beaten
1 can (15 oz) pumpkin (NOT pumpkin pie mix)
1/2 Cup Raisins
Cream Cheese Frosting
Heat oven to 350 degrees. Grease jelly roll pan, 15 1/2 x 10 1/2 by 1 inch.
Beat all ingredients except raisins and Cream Cheese Frosting in large bowl
with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat
on medium speed 2 minutes, scraping bowl occasionally. Stir in raisins. Pour
in pan.
Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool completely, about 2 hours. Frost with Cream Cheese Frosting. For bars,
cut into 8 rows by 6 rows. Store in refrigerator.
Cream Cheese Frosting
1 pkg (3 oz) Cream Cheese, softened
1/3 cup margarine or butter, softened
1 Tbsp milk
1 tsp vanilla
2 cups of powdered sugar
Beat cream cheese, margarine, milk and vanilla in medium bowl with electric mixer on low speed until smooth. Gradually beat in powdered sugar on low speed until smooth.
