BUTTERSCOTCH PUDDING

Ingredients:
2/3 cup brown sugar
2 Tbsp cornstarch
1/8 tsp salt
2 cups milk
1 large egg yolks, slightly beaten
2 Tbsp butter, softened
1 tsp vanilla

Put the sugar, cornstarch, salt in 2 quart saucepan, gradually stir in milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute after that.

Gradually stir at least 1/2 of the hot mixture into egg yolks; stir back into the hot mixture in the sauce pan. Boil and stir 1 minute and remove from heat. Stir in butter and vanilla.

To make vanilla pudding, substitute 1/3 cup white for the brown sugar above and use 2 tsp of vanilla instead of one.
