ZUCCHINI BREAD

2 cups uncooked zucchini, grated
2 cups sugar
1 cup salad oil
3 eggs, beaten
3 cups sifted flour
1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
11/2 tsp cinnamon
1 cup chopped pecans
3 tsp vanilla extract

Mix all ingredients. Pour mixture into 2 greased and floured 9 x 5 inch loaf pans. Bake at 350 degrees for 40 to 45 minutes.
