PUMPKIN BREAD

3 cups sugar
3 1/2 cups flour
2/3 cup water
4 eggs, beaten
1 cups pumpkin
1 tsp salt
1 tsp vanilla
2 tsp nutmeg
3 tsp cinnamon
1 cup cooking oil
2 tsp soda
1 1/2 cups chopped pecans
1 cup raisins (optional)

Mix dry ingredients. Beat eggs; add to dry ingredients. Add remaining ingredients, except nuts; beat until blended. Fold in pecans. Turn into greased bread pans. Bake at 350 degrees for one hour.

Bread may be baked in four 1 - pound coffee cans, at 325 degrees for 1 hour.
